Looking to eat on the healthy side? Here is how you make skewered marinated vegetables. You’ll need:
- 8 small red potatoes, halved
- 1 oz packet ranch seasoning
- 1/3 cup olive oil
- ¼ cup lemon juice
- 1 red bell pepper, cut into 1-inch squares
- 12 cauliflower florets, 1½-inch diameter
- 2 small zucchini, cut into 1-inch pieces
- Bamboo skewers, 8-inch
Directions:
- Place potatoes in a large casserole with two Tbsp water. Cover, microwave on HIGH for 5 minutes, stirring once; drain.
- In a small bowl, combine seasoning mix with oil and lemon juice. Pour this mix over the potatoes. Stir in remaining vegetables and marinate 1 to 3 hours, stirring occasionally.
- Grease the cooking grate and preheat the grill to medium heat.
- Thread vegetables onto skewers.
- Grill skewers 3 to 5 minutes on each side.
