Skewered Marinated Vegetables

Looking to eat on the healthy side? Here is how you make skewered marinated vegetables. You’ll need:

  • 8 small red potatoes, halved
  • 1 oz packet ranch seasoning
  • 1/3 cup olive oil
  • ¼ cup lemon juice
  • 1 red bell pepper, cut into 1-inch squares
  • 12 cauliflower florets, 1½-inch diameter
  • 2 small zucchini, cut into 1-inch pieces
  • Bamboo skewers, 8-inch

Directions:

  1. Place potatoes in a large casserole with two Tbsp water. Cover, microwave on HIGH for 5 minutes, stirring once; drain.
  2. In a small bowl, combine seasoning mix with oil and lemon juice. Pour this mix over the potatoes. Stir in remaining vegetables and marinate 1 to 3 hours, stirring occasionally.
  3. Grease the cooking grate and preheat the grill to medium heat.
  4. Thread vegetables onto skewers.
  5. Grill skewers 3 to 5 minutes on each side.
