Greek Patty Melt

I love a good patty melt- always have. It’s like a grilled cheese and a burger had a baby, and truly, what could possibly be wrong with that? I adore the Greek twist here to add intrigue and layers of fresh and salty flavors, but feel free to play with it and make it your own!

Here’s what you’ll need: 

Makes 1 Patty Melt

  • 1 Grass-Fed Bubba Burger patty
  • 2 Slices bread
  • 1/4 Cup shredded kasseri cheese (or crumbled feta cheese)
  • 2 Tbsp. Pesto
  • 2 Tbsp. Olive tapenade
  • 3 Thin slices tomato
  • Small handful baby spinach

Directions:

  1. In a cast-iron skillet over medium heat, cook the burger patty until you see juices from the top. Cook about 5 to 6 minutes, then flip, top with half the cheese and cook another 5 to 6 minutes, or until patty reaches desired doneness. Remove to a plate and keep warm.
  2. In the same skillet, pan-toast the second side, spread pesto on one side of each slice of bread, then top one slice with the rest of the cheese to melt. Lower heat if you need to.
  3. Top one slice of bread with the cooked patty, then top with tomato and olive tapenade and baby spinach, then top with the other slice of bread and serve warm.
